Masterful Southern Delight: Authentic Gumbo Recipe to Warm Your Heart

The most famous regional dish in America is generally considered to be 'Gumbo,' which is typically associated with the state of Louisiana.

Gumbo is a soup or dish with roots in African, French, and Spanish cuisines. It usually includes red pepper, onion, green bell pepper, celery, diced meat (chicken, beef, seafood, among various options), and okra. Enriched with spices and typically served with rice, this dish stands as a significant symbol of Louisiana's culture.

1 cup all-purpose flour
1 cup vegetable oil or butter
1 large onion, chopped
1 large green bell pepper, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 kg chicken meat (chicken thighs or breasts), diced
400g diced tomatoes (canned or fresh)
1 liter chicken broth or vegetable broth
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
1 teaspoon fresh thyme or dried thyme
2 bay leaves
250g fresh or frozen okra (optional)
White rice (for serving)


Toast the flour over low heat, stirring constantly until it becomes light brown. Be careful not to burn it.
Add vegetable oil or butter and mix well with the toasted flour. Cook over low heat for about 10-15 minutes.
Add chopped onion, green bell pepper, celery, and garlic. Sauté until the vegetables are softened.
Add diced chicken and cook until the meat changes color and releases and absorbs its juices.
Incorporate the diced tomatoes, then pour in the chicken broth or vegetable broth.
Add the spices (salt, black pepper, red pepper flakes, thyme, and bay leaves) and stir.
Bring the mixture to a boil, then reduce the heat and let it simmer slowly for about 1-1.5 hours.
Add the okra and cook for an additional 15-20 minutes.
Remove the bay leaves before serving.
Cook white rice separately and serve the Gumbo over the rice.
